As the weather gets cooler, you would like to make some soups. Here is a really tasty soup.
Sweet Potato Soup
1 Tablespoon bacon fat
1 cup onions, chopped
2 pieces of celery, chopped
1 pound sweet potatoes, peeled and diced
5 cups chicken brother (or you can substitute vegetable broth)
Salt and Pepper to taste
½ teaspoon nutmeg (you can add a little more if you’d like)
Soup cream for topping
Saute onions, celery, and sweet potatoes in bacon fat for around 5 minutes.
Add broth, cover and bring to a boil.
Reduce heat and Simmer until tender around 15-20 minutes.
Puree in blender and reheat.
Add salt and pepper to taste.
Serve with a dollop of sour cream on top.
Serves 5-6
